Ingredients:
1 tbsp onion, chopped
little olive oil
1 cup broccoli chopped & cooked (steammed)
1/8 cup natural yogurt
1 tbsp flour
1/2 cup chicken stock
1-2 tbsp cheddar cheese
Procedure:
1. Saute onion in a little olive oil until tender.
2. Puree the cooked broccoli with the onion.
3. In a saucepan, whisk together the yogurt and flour.
4. Add the stock, stirring continously and bring to a boil.
5. Lower the heat, add the cheese and broccoli/onion mixture and cook stirring well for a minute or until the mixture has thickened.
