Ingredients:
little olive oil
1 small onion, chopped
1 clove garlic, crushed
250 g sweet potato, peeled and chopped
150 g carrots, peeled and chopped
400 g tomatoes, chopped
600 ml vegetable stock or water
2 tbsps milk
55 g cheddar cheese, grated
Serve with pasta.
Procedure:
1. Heat the oil in a saucepan and sauté the onion for about 4 minutes.
2 Add the garlic and sauté for 1 more minute.
3. Put in the sweet potato and carrots, pour in the tomatoes and boiling vegetable stock or water.
4. Bring to a boil, stirring then cover the pan and simmer for about 30 minutes or until vegetables are tender.
5. Allow to cool, add milk then blend to puree and add the cheese.
6. Cook the pasta separately. Serve warm.
