Sweet Cheesy Veggie

Ingredients:
10 g unsalted butter
5 cm (2 in) leek, sliced
1/2 small sweet potato, peeled and chopped
250 ml boiling water
2 good sized cauliflower florets, cut into pieces
30g cheddar cheese, grated

Procedure:
1. Heat the butter in a pan and add the leek.
2. Saute gently for about 3 minutes until soft.
3. Add the sweet potato and pour over the boiling water and cook for 5 minutes.
4. Add the cauliflower and cover and continue to cook for 5 minutes.
5. Whiz the vegetables in a blender together witj the grated cheese.
