Gourmet Butternut Squash Soup with Vanilla

Ingredients:
1/4 onion, chopped finely
little olive oil
1 cup butternut squash, peeled and diced
pinch of freshly ground black pepper
drop of vanilla extract

Procedure:
1. Saute the onion in the oil until tender.
2. Add the diced squash and the freshly ground black pepper. Saute for 10 minutes.
3. Just cover with hot water and bring to a boil.
4. Reduce the heat then simmer, covered for 10 minutes until the squash begins to soften.
5. Add the vanilla extract and simmer for a further 5-10 minutes.
6. Blend in a food processor and serve.
